Voor de Foodblogswap* van deze maand mocht ik iets kiezen van het blog Letstalkaboutfood van Terka. Ik ging voor een soep met bloemkool en broccoli (door Terka koolsoep genoemd). Wel besloot ik tot een kleine aanpassing van haar recept. In het oorspronkelijke recept wordt namelijk blauwe kaas gebruikt en als ik iets niet lust….! Om de soep toch voldoende pit te geven voegde ik een flinke lepel mosterd aan de soep toe. Een een uitje en een teentje knoflook 🙂
Ingrediënten (voor 2 a 3 personen)
- 250 gram bloemkoolroosjes
- 250 gram broccoliroosjes
- 1 liter kippenbouillon
- 1 ui
- 1 teentje knoflook
- mosterd naar smaak
- peper en zout
Snijd de ui en de knoflook fijn. Bak dit even aan in een pan met een scheutje olijfolie. Vervolgens voeg je de broccoli en bloemkool toe en bak je deze ongeveer 5 minuten mee. Dan voeg je de bouillon toe. Laat dit 15-20 minuten goed koken.
Daarna is het een kwestie van pureren met de staafmixer en verder op smaak brengen met mosterd, peper en zout. Het resultaat is een gezonde, goed vullende soep met een beetje pit.
Deze bloemkool broccolisoep is lekker met een stokbroodje gegratineerde kaas!
